Super Omelette

  • Sea salt and freshly ground black pepper
  • free-range/organic chicken breast 100g
  • 2 teaspoons olive oil
  • 2/3 eggs
  • 30g goat's cheese crumbled or soft goats cheese
  • 20g baby spinach
  • ½ avocado, peeled and sliced
  • 1 tablespoon chopped chives


  1. Season the chicken and cook until cooked, remove from the heat and slice thinly
  2. Heat the oil in a small frying pan. Beat the eggs with salt and pepper in a bowl and tip into the pan, lifting the edges of the omelette with a spatula to avoid sticking.
  3. When the omelette is beginning to set, place the chicken, cheese, spinach and avocado on top and cook for 1 minute further.
  4. Remove from the pan and sprinkle the chives on top. Serve and enjoy!
