Sea Bass with Tomato Salsa

Ingredients

  • Sea salt and freshly ground black pepperPersonel Training
  • 1-tablespoon olive oil
  • 4 x 200g sea bass fillets
  • 2 tablespoons fresh oregano, chopped
  • For the tomato salsa

  • 500g ripe tomatoes, peeled, deseeded and finely chopped
  • 2 tablespoons olive oil
  • 1 medium shallot or small red onion, peeled and finely chopped
  • Juice of ΒΌ lemon
  • Sea salt and freshly ground black pepper
  • 2 tablespoons fresh oregano, chopped

Method

  1. Preheat the oven to 180/gas mark 4
  2. Make the salsa by tossing all the ingredients into a large bowl.
  3. Season and drizzle a little oil over the sea bass and bake in the oven for 15-20 minutes or until cooked through.
  4. Serve the fish with the salsa, sprinkle the oregano on top and eat with a pile of your favourite vegetables.
